Sweet Kumara with Maple Syrup
- olive oil
- 6 large kumara- purple or golden
- 150gm butter
- salt and pepper
- 100gm toasted walnut pieces
- maple syrup
Peel kumara and slice into rounds of even size, season with salt & pepper and a good drizzle of olive oil. Roast in a hot oven (200c) for approximately 20 minutes or until soft.
While the the kumara is still hot, blend with the chopped butter until just smooth. Taste for seasoning.
Serve with toasted walnuts sprinkled over the top and drizzle over as much maple syrup as you like.
