Nicki's Orange Cake
- 1 cup yoghurt
- 140g cornmeal
- 2 eggs
- zest of 3-4 oranges or pulp of 2 oranges
- 250g sugar
- 250g butter
- 200g self-raising flour (or 100g cornflour, 100g rice flour and 2 tsp baking powder)
Combine yoghurt, cornmeal and orange in a bowl. Cover and refrigerate for 2 hours.
Cream sugar and butter together then add to refridgerated mix.
Beat in eggs, adding one at a time.
Add flour and mix well.
Bake at 180°C for 50 minutes.
Combine 1 cup of sugar and ½ cup orange juice in a saucepan. Bring to a simmer and pour over the hot cake.
