Gingered Kumara Chunks
- 500g kumara, peeled and chopped into 2cm cubes
- 2 tablespoons green pumpkin seed kernels
- 2 teaspoons grated fresh ginger
- 2 tablespoons olive oil
- 1/2 teaspoon chicken stock powder
Grease a casserole dish, sprinkle with the grated ginger and chicken stock powder, add the kumara cubes.
Sprinkle with the pumpkin seeds and drizzle with the olive oil.
Cover and microwave on High power for 8 - 10 minutes until tender.
Stir and serve.
Note: You can use any variety of kumara or a mixture or varieties. If cooking in a conventional oven, cover and cook at 180°C - 190°C until the vegetables are tender, about 30 - 35 minutes.
