Turkey Burgers
These scrumptious burgers are perfect for outdoor feasting and the recipe is easily doubled.

Ingredients
- 400g turkey mince (or use chicken mince)
- ⅓ cup soft fresh breadcrumbs
- ½ tsp salt
- Freshly ground black pepper to taste
- 1 Tbsp mayonnaise (I use Best brand mayonnaise)
- 1 Tbsp creamy Dijonnaise mustard
- 1 tsp Worcestershire sauce
- 1 tsp dried tarragon
- Finely grated zest 1 small lemon
- Olive oil
- 4 burger buns
- Butter, optional
- Lettuce leaves or rocket
- Pickles or gherkins, sliced
- Cranberry sauce or relish
Instructions
- Combine turkey mince, breadcrumbs, salt, pepper, mayonnaise, mustard, Worcestershire sauce, tarragon, and lemon zest in a bowl. Mix well, whipping in a little air, and shape into four patties. Transfer the patties to a tray and chill for one hour.
- Preheat a barbecue grill. Brush the patties with olive oil. Cook on the grill until the underside of the meat turns white. Brush with more oil, then flip over and continue cooking until cooked through (turkey, like chicken, needs to be cooked right through).
- Meanwhile, toast the buns, cool them, and spread them with butter. Stack with salad greens and pickled or sliced gherkins. Add the patties and top with cranberry sauce or relish. Serve immediately.
