Cheap Tiramisu

Instead of using pricey and often hard-to-find savoiardi biscuits, this recipe involves making a very simple sponge with oil.

Ingredients

  • For the sponge cake:
  • ¼ cup oil
  • 1 egg
  • ½ cup milk
  • ¾ cup sugar
  • 1⅓ cups self-raising flour
  • For the coffee soak:
  • 2 cups strong brewed coffee
  • For the cream topping:
  • 1 cup thickened cream
  • 100g mascarpone
  • 2 tablespoons sugar
  • To finish:
  • 1 tablespoon cocoa powder

Instructions

  1. Make the sponge:
  2. In a large bowl, whisk together the oil, egg, milk, and sugar until well combined.
  3. Gently fold in the self-raising flour until smooth.
  4. Pour the batter into a greased baking dish - ideally the one you’ll serve the tiramisu in.
  5. Bake at 180°C (350°F) for around 35 minutes, or until golden and fully cooked through.
  6. Soak the cake:
  7. Once the sponge has cooled slightly, use a skewer to poke holes all over the surface.
  8. Slowly pour the cooled coffee over the cake, allowing it to absorb. Set aside and let it cool completely.
  9. Make the cream topping:
  10. In a mixing bowl, whip the cream, mascarpone, and sugar together until light and fluffy.
  11. Spread the mixture evenly over the cooled, coffee-soaked cake.
  12. To finish:
  13. Chill in the fridge for at least 4 hours, or ideally overnight.
  14. Dust the top with cocoa powder to serve.
