 - 1/2 tsp dried dill
 - 2 tsp lemon juice
 - Sea salt and cracked black pepper, to taste
 - 1/2 cup cornflour
 - 1 tsp ground turmeric
 - 1 tsp ground cumin
 - 1 tsp smoked paprika
 - 1 tsp salt
 - 500g firm white fish
 - Oil or ghee for frying
 - 8 soft corn or flour tortillas
 - Finely shredded cabbage
 - 1 avocado, stoned and thinly sliced
 - 2 radishes, sliced thinly
 - A handful of fresh coriander leaves, roughly chopped

Instructions
- Combine the mayonnaise, capers, dill and lemon juice in a small bowl and stir well. Season generously with salt and pepper. Place in fridge until ready to use.
 - Combine the cornflour, spices and salt in a large bowl.Cut the fish into bite-sized pieces and toss together with the flour.
 - Heat 1cm of oil in a sauté pan over a medium-high heat. Cook the fish in two batches (to avoid overcrowding the pan) until golden and crunchy. A minute or so on each on each side should be plenty.
 - Heat the tortillas. Top each with some shredded cabbage, avocado and some radish slices. Place a few pieces of fish on each and drizzle with the caper mayonnaise.
