Senior station officer Katie Smart from Takapuna has been on the front line of the efforts to put out the fire at the Convention Centre in Auckland's CBD. She is also New Zealand's highest ranking operational female fire fighter. She shares her experiences over the past few days being part of a massive effort dowsing the flames.

This gorgeously rich and meaty (but entirely vegan) nut mince is delicious. It makes a brilliant taco filling but can also be enjoyed in a burrito bowl, tossed through pasta as a vegetarian bolognese or as a wonderful twist on mince on toast, topped with slices of avocado.

Kelly says to make sure you take the time to really caramelize the carrot. This adds crucial depth of flavour to the finished product. The full recipe is here
