Salad queens Mary Cox and Gemma Heffernan share with us a couple of recipes from their new cookbook Rice Recipes: A Third Helping.
One is a delightful Middle Eastern salad of eggplant roasted in sumac, cumin, olives, tomatoes and pistachios.
The other is a vegan broccoli salad smothered in a creamy herby avocado dressing.
