It took just 71 minutes for the 23-year-old to wrap up the match 6-3 6-1 in front of a packed stadium at the Stanley Street tennis centre.
Davis always appeared the better on the day, breaking Konjuh's serve in the sixth game of the first set.
Ranked 61st in the world, the trophy is Davis' first professional title earning her over $60,000.
It was the American's fifth time to Auckland and she told the crowd the feeling was "indescribable" as she raised the singles trophy.

"It's an incredible feeling winning my first WTA title at my favourite tournament. I've been waiting for this moment for quite a few years. My goal was to just have fun and play my game and execute my shots," said Davis.
A semi-finalist in last year's tournament, Davis proved to be a threat from the out set this year, knocking out fifth seed Kiki Bertens in the first round and fourth seed Barbora Strycova in the quarters.
She waltzed into the final after seventh seed Jelena Ostapenko withdrew during the semi final due to a cold.
Konjuh's biggest scalp of the tournament was the Danish third seed Caroline Wozniacki, who she defeated in the quarter finals.
The runner up received just over $30,000.
