Yorkshire bacon secures top cuisine award

A South Canterbury pig farming couple has won the supreme title in the third annual Cuisine Artisan Awards.

Ian and Linda McCallum-Jackson farm free-range pigs near Waimate and produce pork products for local farmers' markets, restaurants and specialty stores.

They won the supreme award with their Havoc Prime Pork traditionally dry-cured Yorkshire black bacon, which one judge described as the best bacon he has had in a long time.

Linda McCallum-Jackson says the Yorkshire bacon is made with no added liquid and smoked using natural fruit woods.

She says it started out as a family favourite, before the couple began selling it at the Otago Farmers' Market in 2009.
