Fifth-generation baker Ryan Simmons is the co-founder of Waikato bakery Volare which produces acclaimed sourdough bread, pastries and sweet treats.

He talks to Kathryn Ryan about going from a hobbyist baker to running 5 outlets and employing 45 people.
