Fruit and Vege Report with Glenn Forsyth

CRISPY PARSNIPS WITH BACON (from Southern Cross Produce's operations manager, Regan Queale) 

Ingredients
500g parsnips
Grated cheese to taste
Onion rings
2 rashers bacon cut into pieces
Breadcrumbs
Herb salt
 
Method
1.    Peel the parsnips and cut into strips lengthways.
2.    Boil until tender - about 10-15mins.
3.    Arrange on a serving dish.
4.    Layer the cheese, onion, bacon and breadcrumbs over the parsnips.
5.    Season with herb salt.
6.    Grill in medium hot oven until golden brown.
