Flip Grater's Carrot Lox

From Afternoons, 3:07 pm on 3 December 2021

Flip Grater says food and music have been "the connective tissue of her life story".

The musician and founder of vegan food business Grater Goods talks to Jesse Mulligan about her new cookbook that's coming out in time for Christmas - and shares a recipe for Carrot Lox.

Plenty of cookbooks showcase "the raw vegan side of things", but The Grater Good is more about vegan versions of decadent European recipes, Flip says.

"It's just a book about plant-based foods that are primarily delicious, and some of them happen to be healthy."

The Grater Good is due to be in New Zealand bookstores next week or you can pre-order a copy here.

The idea of turning carrots into something like smoked salmon sounds crazy and difficult but it's easy to make at home with a good peeler, Flip says. She was never a fan of fish - and has been vegan since she was a teenager - but does like "oceanic vibes" in food.  In the case of Carrot Lox, these come from dill, liquid smoke and dried seaweed.
