Studded with rosemary and garlic, slathered with butter and set on a rack above a bed of potatoes, onions and tomatoes. Add a salad of winter leaves and sliced persimmon and pomegranate seeds, and perhaps a bowl of minted yoghurt with toasted ground cumin, a drizzle of pomegranate syrup and a sprinkle of toasted pine nuts - and you have a feast!
