Darisuh Lolaiy of Auckland restaurant Cazador shares a recipe from the restaurant's new menu - Rare saddle of hare with ajo blanco.

He says ajo blanco is a balance of fresh cucumber, almond and garlic, and is traditionally served as a chilled soup with fresh grapes to garnish.

However he has adapted the soup to a puree as an accompaniment to the gamey, lean hare.
