Volker Marecek is the executive chef at The Langham Auckland and has just returned from Sri Lanka where he has been teaching budding young chefs at the MJF Foundation's culinary centre just outside Colombo. Many of them are from poor families, live with a disability or may have been injured in the recent civil war.
And he shares a recipe for Kale Mallung.
