Warm Feta Balls with Thyme Infused Honey

Ingredients

Feta balls

  • ¾  cups self-raising flour
  • 1 egg
  • 3 tablespoons  milk
  • ½  cup Parmesan powder
  • freshly ground black pepper
  • pinch of salt
  • 150g feta
  • 3 cups sunflower oil for frying

Thyme infused honey

  • 1 cup honey
  • 4 sprigs thyme

Method

Mix the feta ball ingredients together, set aside.

Cut the feta cheese into small cubes.

Create a ball around the feta with the mixture, and completely enclose the feta, you may need extra flour for this procedure.

Heat the oil ready for frying.

Heat the honey with the thyme in a microwave or small saucepan on cooktop.

Leave the thyme in to steep.

Re heat the honey just before serving and strain out the thyme.

Fry the feta balls immediately before serving, do this in batches of 3 or 4, keep the already cooked ones in a warm oven (about 100⁰C) whilst you cook the rest.

Serve three per bowl, drizzle with the honey, serve immediately.
