(Makes 70-80)


  • 3 egg whites
  • 450g icing sugar
  • juice of 1 lemon, strained
  • 30g ground cinnamon
  • 500g unblanched almonds
  • 125g sugar for rolling out


1 Beat egg whites until frothy and add icing sugar. Spoon out 10 tablespoons of the mixture into a small bowl and reserve.

2 Add lemon juice, cinnamon and almonds to the remainder. Mix well, then let the mixture rest for 20 minutes.

3 Put sugar on a workbench and roll out small pieces of dough at a time until 1cm thick. Cut out star shapes and transfer them to a tray lined with baking paper. Let the biscuits dry for about 2 hours, then brush them with the reserved egg white and icing sugar.

4 Bake the stars for about 20 minutes in an oven preheated to 180°C (regular bake). The icing should still be quite pale. Once cool, store airtight.
