Whitebait Fritters

  • 400g whitebait
  • 2 eggs
  • ½ cup flour (I use gluten free and am delighted with the results)
  • juice of one big lemon
  • 1 tsp salt
  • black pepper in abundance
  • Splash of beer to make it the right consistency (whitebait packs have different amounts of liquid)


Put whitebait in a bowl and beat in other ingredients. Make into patties.  Fry in butter or oil mix until crisp.
