Warmed Fruit Salad with Ginger & Star Anise Syrup

  • 1 orange, peeled with the rind removed
  • 1 mango, peeled
  • 1 pawpaw, peeled
  • ½ pineapple, peeled
  • ½ rock melon, peeled
  • ¾ cup castor or palm sugar
  • knob of fresh ginger, slivered
  • 6 star anise
  • 1 ½ cups water


Cut the ripe fruit into bite-sized chunks and put onto a platter or bowl.

Put the sugar, ginger, star anise and water in a pot over a medium to low  heat. Reduce the liquid to a syrup.

Pour over the chunky fruit and serve.

Feel free to add strawberries, halved and kiwifruit, peeled and sliced and any other fruit that's available at this time of the year to the salad.
