Vegetarian Barbecue: Eggplant with Feta and Herbs

  • 1 eggplant
  • 2 tbsp avocado oil
  • 1 tsp mixed herbs
  • 50g feta cheese, crumbled finely
  • 1 tbsp chopped fresh mint


Slice eggplant into 1cm thick slices and then into half rounds. Brush both sides with avocado oil then sprinkle with sea salt and mixed herbs. Leave for an hour to allow flavours to infuse. Chargrill on the barbecue and, while still warm, sprinkle with feta cheese and fresh mint to serve
