Timaru Lemon Ice Cream

This is a Kiwi classic recipe which we must not lose. While it is known to many older cooks, I didn’t come across until I was at a dinner in Timaru about 10 years ago. It seems too good to be true; very easy to make and absolutely delicious. I like to trickle a little lemon syrup over it just before serving, and also serve some crystallized lemon peel – if I’ve got around to making it.

(Serves 4)

Ingredients

  • 1 cup cream
  • three eighths cup caster sugar
  • very finely grated zest of 1 Meyer lemon
  • juice of 1 large Meyer lemon

Method

Put all the ingredients in a mixing in a mixing bowl and whisk until mixed. Taste and add more lemon juice or sugar if needed. Whisk until softly whipped. Do not over-whip. Pile into 4 small dishes, cover with plastic wrap and freeze.
