Täve (one tray rice dish from Albania)
Täve is a super easy, one tray rice dish from Albania! <3
Cost per person $4
Ingredients:
Your choice of vegetable: I used:
1 onion diced (I set aside ¼ for the meatballs)
1 potato, diced into small cubes
1 leek, roughly chopped
(you can also use: capsicum, eggplant, etc)
For the meatballs:
500g mince (use a mince with around 18% fat)
¼ onion
1 tsp paprika or cumin, optional
Salt and pepper
1/3 cup soda water or regular water
1 tsp paprika, optional
1 tsp oregano, optional
2 tbsp tomato paste
2 tbsp butter or oil
1 cup rice
1 ¾ water
Method
Prepare the veggies, place in a bowl and season with salt and pepper. Set aside for now.
To make the meatballs – combine the mince, onion, paprika, and pepper and soda water, and mix well to combine. Roll into large meatballs and set aside.
In a pan that can go in the oven, toast the rice in butter or oil. If you don’t have a pan that can go in the oven, just fry this off in a pan for now and transfer to a tray after toasting.
Add the paprika, oregano, and tomato paste, stir and fry off for 1 minute.
Turn the heat off. Add the water, a pinch of salt and stir.
Sprinkle on top the vegetables and place the meatballs.
Bake at 220 degrees Celsius for round 20-30 minutes, until the meat and the vegetables are cooked! It might need closer to 30 minutes if you using vegetable like potato.
I served it with a yogurt sauce – just yogurt, lemon juice, salt and pepper. You can also add a grated cucumber or garlic to the sauce!
