Tamarillo Jelly and Syrup

Skin tamarillos by cutting them in half then placing in pot, covering them with cold water and bringing to the boil. Skin the fruit and place the skins back in the water. Use the fruit to eat as dessert or make jam or chutney with it.

Bring the skins back to the boil for 30 minutes then cool slightly before placing in a mutton cloth or flour bag to strain into a large bowl overnight. The next day measure the juiced water by cupful and put into a pot and bring to the boil again.

Then put in the same cup measurement of sugar and bring back to the boil, stirring well to dissolve the sugar.

Boil rapidly for up to 15 minutes, testing a little bit in a cold saucer to check if will set. Bottle in glass jars or bottles. 
If it does not set it can be used as Syrup - to flavour water, and soda water and for pancakes.
