Sugar-free Berry Chia Jam

This is a simple berry jam that can be made all year round with fresh or frozen berries. I have used prunes to sweeten and chia seeds to thicken the jam and add nutrition. If you don’t have chia seeds on hand then reduce the water to 1/4 cup.

Makes approx. 300ml jar

Ingredients:

  • 2 cups fresh or frozen berries – strawberries, blackberries, blueberries, raspberries
  • 8 prunes, finely chopped
  • 1/2 cup water
  • 1 tablespoon chia seeds

Method:

Combine berries, prunes and water in a small saucepan and place over a low heat. Leave to cook very slowly for 20 - 30 minutes until the berries and prunes are nice and syrupy. Remove from the heat and stir through the chia seeds. Pour the hot jam into a hot sterilised* jar and secure the lid. Will keep for 3 months in a cool pantry, once opened keep refrigerated and use within 1 month. 

*To sterilise the jar: wash the jar and lid thoroughly then fill with boiling water, and cover the lid with boiling water. Leave for 1 minute then pour out the hot water and air dry on a dish rack.
