Strawberry, pistachio & creamy feta toasts
You’ll never look at toast the same way again with this burst of summer flavour. Tart-sweet summer strawberries are the perfect match for creamy, salty feta, fragrant tangelo juice and crunchy pistachios.

- 125g cream cheese
- 125g creamy feta, crumbled
- 250-350g strawberries, hulled and diced juice and finely grated zest of
- 1 tangelo
- 4-6 slices rustic country-style bread
- 1⁄2 cup pistachio nuts, shelled and roughly chopped
- freshly ground black pepper
Beat the cream cheese and feta until smooth. Mix the strawberries and tangelo juice and set aside. Toast the bread and arrange on a board or plate. Spread a generous amount of the feta mixture on each piece of toast. Tumble the strawberries on top and drizzle with a little of the juices. Sprinkle over the tangelo zest, pistachios and a tiny pinch of freshly ground black pepper. Serve immediately.
