You’ll never look at toast the same way again with this burst of summer flavour. Tart-sweet summer strawberries are the perfect match for creamy, salty feta, fragrant tangelo juice and crunchy pistachios. 

This recipe is out of my brand new Summer journal (out December 7th), a beautiful collection of easy summer recipes, gardening tips and information on how to start a garden, create great compost, grow from seed, create homemade gifts and loads more. 

Serves: 4-6
Prep time: 10 minutes 
Cook time: 5 minutes 


  • 125g cream cheese
  • 125g creamy feta, crumbled
  • 250-350g strawberries, hulled and diced juice and finely grated zest of
  • 1 tangelo
  • 4-6 slices rustic country-style bread
  • 1⁄2 cup pistachio nuts, shelled and roughly chopped
  • freshly ground black pepper 


Beat the cream cheese and feta until smooth. Mix the strawberries and tangelo juice and set aside. Toast the bread and arrange on a board or plate. Spread a generous amount of the feta mixture on each piece of toast. Tumble the strawberries on top and drizzle with a little of the juices. Sprinkle over the tangelo zest, pistachios and a tiny pinch of freshly ground black pepper. Serve immediately.
