(Makes 1x 500g jar)
- 500gm prepared fruit ( peaches, apricots, pears)
- 200ml water
- 150gm brown sugar
- 100ml white wine vinegar
- 1 cinnamon quill
- 1 tsp black peppercorns
- 3 cloves
- 1cm fresh ginger (sliced)
- 1 small red chilli (or substitute with a pinch of chilli flakes)
Place all ingredients - except fruit, into a non corrosive pot and bring to the boil. Lower heat, add prepared fruit, and cook until tender.
Cool and pack into sterilised jars.
Boil down liquor until syrupy and then pour over fruit. The fruit must be covered. Seal and leave in a cool dark place for at least a month.
