A speedy pasta meal can be made in minutes. Make the sauce first and put aside.
- packet of pasta spirals or similar
- 3 large tomatoes
- diced pumpkin
- roasted red peppers
- mixed lettuce leaves
Cook pasta spirals or similar according to packet directions.
While it’s cooking peel – yes it does make a difference – then dice three large fresh tomatoes.
When pasta is cooked, drain reserving 1-2 Tbsp of cooking liquid. Return pasta to hot saucepan, add sauce and diced tomatoes and if necessary the little bit of liquid.
Toss pasta and serve with bread for mopping up the sauce.
Make a big fat salad of roasted diced pumpkin and roasted red peppers (out of a jar if necessary) and whatever lettuce leaves are to hand in or in the garden – a little dribble of oil drained from the sauce to dress the salad and dinner is on the table in thirty minutes or so.
