Soy Glazed Chicken Nibbles

There are times when it's really handy to know that have a large batch of chicken nibbles waiting and ready to go, without any last minute rush, or to the minute timing required. There is a window when the nibbles are cooked and at their plumpest, but while they do start to shrink if you go beyond this, they're still delicious.

Ingredients

  • 1/4 cup dark soy sauce
  • 1/4 cup medium-dry sherry
  • 2 Tbsp honey
  • 1 Tbsp sesame oil
  • 1-2 Tbsp lemon juice
  • 2 tsp cornflour
  • 2 large cloves garlic, grated
  • 1-2 Tbsp grated ginger
  • 1-2kg chicken nibbles
  • toasted sesame seeds and/or finely sliced spring onion to garnish.

Method

Place the first eight ingredients in a medium sized bowl and whisk until evenly mixed.

Non-stick spray your slow cooker insert, then add the chicken nibbles. Pour the soy mixture over the chicken, stir to mix coat all the chicken pieces.

Cover and cook on highfor 3-4 hours. If you can, stir the chicken pieces every hour or so, this will ensure they are more evenly glazed.

When the chicken is cooked, stir it again to give a final coat with the soy glaze, then lift the nibbles from the cooker with tongs or a slotted spoon.

Sprinkle with toasted sesame seeds and/or finely chopped spring onions and serve with plenty of paper napkins!
