Skate Wings with Lemon and Caper Butter

  • 4 skate wings lightly floured and seasoned
  • 200 g butter
  • 1 cup fresh soft herbs (parsley, chives. Basil, chervil etc etc)
  • Juice and zest of 2 lemons
  • 2 T Capers
  • 1 t Freshly ground black pepper


Blend all ingredients in a food processor and then scrape onto baking paper and form into a sausage shape and freeze. When hard just cut off nice neat discs of butter and place ontop of the Skate wings as they are being served and they will melt into the fish with a lovely fresh green herby flavor.

PS. A soft herb is the delicate flavored ones, not rosemary or thyme.
