Satay Pork Noodles

Ingredients

  • 1T oil
  • 400g pork pieces
  • 1 onion - sliced
  • 2 cups frozen stir-fry veges
  • 2T sweet chilli sauce
  • 3T peanut butter
  • 3T soy sauce
  • 1t brown sugar
  • 280g egg noodles
  • ½ cup peanuts - crushed

Method

Add the oil to a large frying pan and cook the pork and onion for 6-8 mins.

Add the frozen stir-fry veges to the frying pan and cook for 3-4 mins.

Add the sweet chilli sauce, peanut butter, soy sauce and brown sugar to the frying pan, stir to coat. Add in a small amount of water, if the sauce is too thick.

Cook the egg noodles according to packet directions and drain once cooked.

Add the chicken mixture and egg noodles to a large mixing bowl and toss to combine.

Serve topped with the crushed peanuts.
