Salad Dressing

For 1 cup (250ml) of homemade olive oil dressing ($2.44) or canola oil dressing ($1.24 ), shake together in a bottle or jar:

  • 150 ml (about 2/3 cup) olive or canola oil
  • 75 ml (about 1/3 cup ) white wine vinegar
  • 1 tsp mustard powder
  • 1/2 tsp salt
  • 1 tsp sugar
  • Variation: Add 2 tsp of tomato paste to make Italian Dressing.


The quantities in the recipe above may be varied to suit your taste. I like to cut up and tear a range of salad ingredients and put them in a bowl in the refrigerator to chill for 10 - 20 minutes , covered with a plate or cling film. A few seconds before serving, I add 1 - 3 Tbsp of my dressing (for 2 - 3 servings) and toss the dressing gently through the salad to coat everything.
