Roasted Red Pepper Dressing

Ingredients

  • 2 red peppers, halved, seeded
  • ½ tsp minced chilli
  • 2-3 pieces sun-dried tomatoes
  • 2.5cm piece ginger, peeled and grated
  • ½ cup natural yoghurt
  • salt and pepper to taste

Method

Preheat grill.

Place halved peppers on a grill rack and roast until skin has blackened and blistered.  Remove to a bowl and cover with plastic wrap.

Leave to steam and cool, then peppers will peel easily.

Place peppers in food processor with chilli, sun-dried tomatoes, and ginger and process until smooth.  Add yoghurt and season well with salt and pepper.
