Raspberry Coulis

  • 2 cups frozen or fresh raspberries
  • ½ cup sugar
  • 1 tablespoon lemon juice


Bring the raspberries and sugar to the boil. Simmer, stirring occasionally for about 15 minutes until it thickens slightly. Strain and press through a sieve or mouli. Stir in the lemon juice. Refrigerates for up to a week; or freeze in smaller batches.
