Rare Beef with Condiments

Ingredients

  • 1 kg fillet of beef, or other lean cut beef
  • 2 tablespoons sesame oil
  • Salt and pepper, or Japanese spice rub
  • 1 daikon radish, finely grated
  • ¼ cup pickled ginger
  • 12 chives finely chopped
  • You will also need: Ponzu sauce, wasabi and some julienned vegetables of your choice

Method

Sear the meat in very hot pan for 3 minutes either side. When cool, wrap in cling film and refrigerate.

Combine the daikon radish, ginger and chives, set aside till ready to serve.

Place your ‘julienned vegetables’ in a bowl with 2 tablespoons of rice wine vinegar and 1 tablespoon of caster sugar.

On each plate, place four slices of the rare beef, a little ramekin of ponzu sauce, a little pile of pickled vegetables, a small dollop of wasabi and a pile of the radish and ginger salad.

For my pickled vegetables, I like to use carrots, capsicum, spring inion and cucumber.
