Rack of Pork in Hay

(Serves 6)

Ingredients

  • 1 rack of pork (with six chops, and skin scored and rubbed with salt)
  • 8 crushed garlic cloves
  • 3 Tbs olive oil
  • 3 handfuls of hay (untreated)
  • small bunch of rosemary
  • small bunch of thyme
  • 3/4 cup of white wine
  • 6 pickling onions ( cut in half with skin on)
  • 6 jerusalem artichokes

Method

Preheat oven to 180C.

Heat olive oil in a heavy based pan add the rack and cook over a moderate heat until pork rack is evenly browned.

Put the hay, thyme and rosemary in a casserole and pour in the white wine.

Place pork rack, onions and jerusalem artichokes on top and cover with a lid.

Cook in the preheated oven for 1 hour.

Remove and leave to sit for 15 minutes to rest before serving.

Looks great served centre of table, straight from the casserole dish.
