Prune and Bacon Stuffing
- 250g free-range bacon, diced
- 300g pitted prunes, roughly chopped
- 100g fresh bread, crumbed in food processor
- 30g butter, melted
Fry bacon and put into a bowl. Add chopped prunes, breadcrumbs and butter. Add a pinch of salt. Then put back into food processor and give it a few pulses to bring it together. Chef's tip: Indian supermarkets, such as the one on the corner of Colombo and Huxley streets in Christchurch, seem to have the best prunes.
