Plum and Brown Sugar Clafoutis

(Serves 6)


  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 500 gr red plums, washed, cut in half & stones removed
  • 1 cup milk
  • 2 tablespoons cornflour
  • 2 eggs
  • 2 yolks
  • ½ cup brown sugar
  • ½ cup cream


Preheat the oven to 210C.

In a large frying pan melt the butter then add the sugar and plums and cook for 5 minutes, allow to cool.

Grease a metal handled iron fry pan (so that it can go in the oven) or quiche dish with a little extra butter & sprinkle with extra sugar.

Mix the milk with the cornflour, then in a separate bowl beat the eggs and yolk, add the sugar and cream and mix well, then stir in the milk mix.

Arrange the plums in your pan or dish.

Pour the mix over and cook in the oven for aprrox 30 to 40 minutes, till puffed up and golden.

Serve dusted with icing sugar, and with cream or ice-cream & it’s best enjoyed while still warm.
