Peppered Mackerel And Prune Spread

A package of Seasmoke Peppered Mackerel is a useful item to have in the fridge on a holiday weekend - to make a salad for lunch, as part of an antipasto plate, to use in fishcakes, or to make this delicious spread to put on crackers, crusty bread, or as a filling for dainty sandwiches.

Ingredients

  • 100g (half a package) Seasmoke Peppered Mackerel.
  • 50g (4-5) moist prunes.
  • 50g Country Goodness Lite cream cheese.
  • Juice of half a lemon.
  • Pinch of nutmeg, cloves or cardamom.
  • Pinch salt.

Method

Roughly chop the mackerel and prunes and put in a processor. Pulse until finely chopped. Add the remaining ingredients and adjust seasoning to taste. Makes about 1 cupful.
