Ingredients

  • 240g all purpose flour
  • 6 large egg yolks
  • 1 large egg
  • 1½ tsp olive oil
  • ¼ tsp of salt

Method

Place flour and salt in the bowl of a food processor. Mix egg yolks, whole egg and olive oil together in a separate bowl. Start food processor, and add beaten eggs and olive oil. Combine until dough comes together to form a ball. Remove from food processor and knead for 3 minutes, then leave to rest for 5 minutes under a tea towel. Knead for a further 2 minutes or until silky and elastic. Leave to rest for a minimum of 1 hour, before rolling out to make the agnolotti.
