Mixed Berries with Indian Cheese
- 500g mixed berries
- (strawberries, gooseberries, blackberries, blueberries)
Ingredients Indian Cheese
- 50g nibbed almonds
- 125g cream cheese
- 125g cottage cheese
- 125ml castor sugar
- 2ml grated nutmeg
- 5ml ground cardamom
- 250ml cream
Wash and hull the berries and pile into glasses or serving bowls. Cover and chill in the fridge.
Toast the almonds in a dry frying pan. Cool. Beat together the cream cheese, cottage cheese, castor sugar, nutmeg and cardamom until well blended. Whip the cream stiffly and fold in with the almonds.
Pile the berries into tall glasses and top with generous spoonfuls of Indian cheese.
