Melted Gooey Apple Brownies

Ingredients

  • 1/2 cup stewed apples  (Granny Smiths are the best)
  • 1 cup apple berry juice
  • 1 tsp pure vanilla extract
  • 2 tbsp oil
  • 40g coconut flour 
  • 35g ground almonds
  • 35g cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 50g coconut sugar or sugar of choice
  •  1/2 cup fair trade chocolate drops or chocolate chopped into chunks

Method

Line an 20cm × 20cm pan with baking paper.

Preheat oven to 180 C.

Mix all liquid ingredients together in a bowl.

In a separate bowl, stir together all dry ingredients except the chocolate

Pour dry mixture into wet.

Add the chocolate to the mix.

Stir to form a batter.

Pour into the pan, and bake 25 minutes – it will look very soft.  Cool, then place in the fridge where it will become firmer.

These brownies are not the usual ones as they are very soft and fudgy like, you will have to be very careful taking them out of the tin.  They are totally chocolatey and delicious, awesome to make for everyone and even those who are gluten intolerant or even vegan, give them a try!

Salted maple caramel sauce

  • 2 T cornflour
  • 1/4 teaspoon cinnamon powder
  • 11/3 cup apple juice
  • 1/3 c maple syrup
  • 2  tablespoons butter
  • 1/3 cup  cream
  • 1/2 teaspoon vanilla extract
  • 2 pinches sea salt

Method

Place cornflour in the bottom of a small saucepan along with the cinnamon and mix together.

Add the apple juice very slowly mixing to a paste first then gradually adding the rest then add the maple syrup.

While constantly stirring, bring to the boil and then reduce the heat, continue to stir until thickened.

Add the butter and the cream and bring to the boil while stirring.

Add the vanilla and the salt, remove from the heat and allow to cool, store in the fridge.

Totally delicious on ice cream or pancakes with cooked slices of apple, Royal Gala are great for this. Enjoy!
