  • 1 onion, thinly sliced
  • 1 red capsicum, thinly sliced
  • knob of butter
  • 1 kg pork and/or beef mince (best quality)
  • ½ cup any chutney
  • 2 cups fresh breadcrumbs, not too fine, any sort of bread
  • salt and pepper
  • 200 gms feta
  • big bunch spinach
  • handful of fresh sweet marjoram if available, or parsley


Sauté onion and capsicum in a little butter until softened, either in a pan or microwave.

Mix meat, chutney, salt and pepper, onions and breadcrumbs together.

Roughly chop spinach and add with the herbs to meat mixture.

Line a loaf tin with baking paper and press a third of mixture in.

Break feta into large lumps and press half into meat. Add another third of meat and repeat feta. Add final third of meat.

Cook at 180°C for 30-45 minutes or until juices run clear.
