Mashed Potato

Ingredients

  • 1 large hand-sized potato per person, halved or quartered
  • 3a quarter as much kumara as potato
  • 1 thumbsize clove of garlic per person
  • 2 Tbs olive oil
  • 2 Tbs butter
  • 1 medium heated lemon, juiced
  • salt
  • pepper
  • flat-leaf parsley, chopped
  • cream (optional)
  • one small onion, chopped (optional)

Method

Steam potatoes, kumara and garlic for 15-20 minutes until just cooked. Put in saucepan, with garlic halved or quartered, and add heated oil and butter.

Mash through ricer, or with solid metal zigzag style masher, whipping towards you. Add lemon juice, salt and pepper to taste, and parsley.

If desired, add cream, retaining fluffiness; and/or onion microwaved soft in olive oil.
