Lime Hokey Pokey Mascarpone

  • 5 tbsp caster sugar
  • 2 tbsp golden syrup
  • 1 tsp baking soda
  • 200g mascarpone
  • 50g soft brown sugar
  • 1 lime juice
  • 1 vanilla pod


Place the sugar and golden syrup into a solid bottomed pan and heat gently, stirring it constantly until the sugar completely dissolves

Increase the heat and simmer to create a light coloured caramel, stir it occasionally to prevent it from burning.

Once a light caramel is achieved, remove it from the heat and as the baking soda, stirring it quickly until it begins to froth. When it does, pour the mixture straight away into a well oiled tray leaving it to cool and harden.

Break it into small pieces before.

Cream the mascarpone, sugar, lime juice and the seeds of the vanilla pod (cut lengthwise and scrape them out with the back of a small knife) with a whisk until its smooth. Fold in the hokey pokey pieces.

Serve with Durian Panna Cotta
