This recipe is more than 500 years old and was said to be a favourite of King Henry VIII. It is amazing in its simplicity, so try to resist the temptation to add other ingredients and just enjoy the perfection. If you really need to add something, serve it with a bowl of fresh strawberries straight from the garden.

(Serves 6 )

Ingredients

  • 900 ml cream
  • 250 g castor sugar
  • juice of 3 lemons

Method

Put the cream and sugar in a saucepan, bring to the boil and cook for 2–3 minutes. Add the lemon juice and mix in well. Allow to cool slightly then pour into six glasses and leave to set in the fridge for at least 2–3 hours. Serve.
