Kumara Cashew Dehydrated Curry
These quantities could do about 6 people
- ½ cup dry rice or couscous per person
- 2 onions
- 3 reasonable-sized kumara
- 2 carrots
- 1 doz yams
- 3 courgettes
- 1 pkt flavouring eg “Asian Kitchen home gourmet stir fry” (try ginger/chilli/garlic)
- 500 g cashews
- 150 g coconut cream powder
Before the trip: Fry onions, kumara, yams in olive oil. Add flavour packet. Add carrots, courgettes later. Mix, spread onto trays and dehydrate.
If having no dessert, reckon on about 160g dry weight per person.
On the trip: Add boiling water and soak for as long as you have time. Later, cook gently for 10 minutes or so. Add coconut cream (mixed to a paste) and cashews at the end. Rice/couscous can be cooked separately or with the mixture.
