Juicy Jumbo Asparagus

Method

Using a vegetable peeler, gently peel away the fibrous layer at the base of the asparagus spear (about one-third of the spear length). This allows the spears to be cooked faster and provides a more tender bite.

Drizzle to coat with good quality olive oil and rock salt

Oven-roasting – arrange the asparagus in a single layer onto an oven tray. Place in a pre-heated oven at 200°C for approximately 10-12 minutes.

Barbeque – heat the barbeque on a high heat. Place asparagus on the grill in a single layer, rotating as asparagus begins to cook, allow approximately 8-10 minutes.

Note that cooking times will vary depending on spear thickness. To maximize caramelisation and to maintain a pleasant crispness, cook until spears are tender when pierced with a fork.

Season with fresh ground black pepper.

We recommend you let the natural Juicy Jumbo sweetness be the star of the dish, by preparing it simply. However, you may wish to sprinkle with best-quality parmesan or lemon juice before serving.

Allow three spears per person as a side dish. Serve with New Zealand sauvignon blanc.
