Island Gin Roasted Chicken
- Organic chicken
- Knob of butter
- Sea salt
- Black pepper
- One cup of ‘spent" Island Gin soaked juniper and herbs ( it helps if you know a distiller!)
- One clove of garlic minced
Mash butter with salt and pepper and push between the skin and the breast of the chicken
Place chicken in a covered roasting tin. Add 30mls of Island Gin, and drizzle the spent gin ingredients over the top of the chicken.
Place in pre warmed oven at 180 degrees with lid on.
Roast for 45 minutes and then check.
Remove lid and baste with all the island gin spent ingredients and the butter.
Put back into oven without the lid and let the chicken skin crisp up. Making sure not to dry out chicken.
Take out and rest for 10 mins.
Enjoy with a fresh Okiwi Passion island grown salad mix.
And maybe a refreshing Gin and Tonic with a fresh sprig of rosemary.
