Iced Coffee

Serves 1

Use plunger, stovetop or espresso coffee but make it strong because the ice will dilute it. Sweeten the coffee but allow for the later addition of vanilla syrup.

Ingredients

  • a tall cold glass
  • ice
  • 1 cup strong coffee (plunger, stovetop or espresso)
  • vanilla syrup to taste
  • 1 generous dollop of whipped cream (whipped to soft peak stage)

Method

Make the coffee, sweeten to taste and set aside to cool. Crush the ice in an electric blender, pulsing it to a fine slurry.

Three quarter fill the tall glass with the ice and pour the coffee over the top.

Add a dash of vanilla syrup and top with a generous spoonful of whipped cream.

Serve with a spoon so you can enjoy the contrasting textures of the cream and the crushed ice. As the drink melts you can stir it all together and drink the result.
